    I came down with some Yelp friends who wanted to get another crack at the food before it closes for the season. When we asked what was available that day, the counter guy mentioned pulled pork shoulder, and offered a sample. I took a bite and said "Man, you just saved me a six hour drive". ~ ~ ~ ~ ~ f l a s h b a c k ~ ~ ~ ~ ~ I'm driving to Sea Trail, a golf/beach resort in the southeast corner of North Carolina. The directions are vague as to when to switch from I-40 to US 117, and since they run parallel for about 100 miles I wind up taking the scenic route. It's a fine day in May, so the windows and sunroof are open. When I stop at the light (yeah, there's just one) in the town of Wallace NC, a heavenly aroma of smoke and meat wafts into the car, And there on the corner is the Kountry Kitchen restaurant. And it's lunch time. ~ ~ ~ ~ ~ b a c k t o t h e p r e s e n t ~ ~ ~ ~ ~ And the ribs were magnificent too, smoky, juicy, perfect chew. The sides did not all hit the mark - excellent collard greens, good baked beans, mushy mac and cheese, generic potato salad. Sauces are rich and complex. I've had a lot of BBQ in MD, VA, NC, and SC, and none better than this. I still take a detour to Wallace on my way to (and often from) the Grand Strand, and Slab O Ribs is worth the trip too.

    4.5 stars. This place is literally a shack on the side of Livingston Road in Indian Head, MD with three names on the building: Slab O Ribs, Joe's Rib Shack, and Palador Rib Shack. You blink and you'll miss it. When you park in a makeshift gravel lot (which was flooded that day), you'll make your way to a small shack that was obviously built around the giant smoker in the middle. We went there on a 90+ degree day and that shack can sure trap heat, you feel bad for the poor dude preparing your delicious meats behind the counter. This place is not in the least fancy. It's every bit of the definition of a hole in the wall. Visible tar holding the roof in place, a few flies, and an outdoor area consisting of picnic tables in long grass by another broken down shack, but don't let appearance fool you, the food here is outstanding. I wish I had taken a picture of the menu but from what I recall from memory we ordered the half rack of ribs at around $15, the pulled pork sandwich, and three sides: mac n cheese, greens and potato salad. The ribs are every bit as fantastic as other reviewers say. We ordered them mild and they came out charred on the outside, tender on the inside.The bbq sauce was mild in flavor and did not disguise the flavors of the meat. I would have preferred more of a smoked flavor on the ribs. I have to be honest, given the days temperatures, the swarm of bees & flies by me while eating outside and the fact that I was covered in head to toe swollen bug bites, I wasn't in the mood to eat the ribs. Don't get me wrong to quote another Yelper they were hittin' and stickin', but they were also sticking to my hands and face and attracting more bugs. These are the type of ribs you would eat in a screened-in setting with a shower nearby. I'm gonna be truthful about what really won me over that day. The pulled pork sandwich. This is north carolina vinegar bbq DONE RIGHT. I am in love with that tangy meat. It came with coleslaw on the sandwich and it wasn't one of those pick up and eat with your hands kinda sandwiches, it was so stuffed you needed to eat it with a fork. One more thing about slab o ribs. I've noticed something about local bbq joints, even if the meat is mind blowing at a joint, the sides have always managed to be subpar. I feel like this is consistent no matter where I go in Baltimore, VA, and DC. Not here. The greens and mac n cheese had to be my favorite. So if you're in the neighborhood of National Harbor, and you are a barbecue fanatic, I recommend stopping by this place. Just remember it's BYOHW (bring your own handy wipes).

    My bf and I traveled from NE for a auto mechanic . After locating him I smelled the delightful scent of bbq pork. Thick meaty ribs that were so delicious they didn't need bbq sauce. But beyond the great food is the personal service from Mr Joe. I told my bf this is the caterer for our wedding...its that damn good.

    Don't let the appearance of the building fool you. This unassuming ribs joint in the middle of nowhere MD arguably serves the best ribs I've tried within a 250+ mile radius. The joint is run by a person who opens the place for about 5 months of the year (and only on Fri-Sun). This man has street cred. He caters the ribs to the White House and Steve Harvey thought the ribs were his top 3 picks of all ribs he tried in his life. As for the menu, it covers your standard BBQ fare such as your brisket, chicken, and ribs, these items will not always be available b/c he only sells a limited amount (if any) on a given day. I appreciate Hannah H. and Ghil for introducing me to this wonderful place. For this visit, I was only able to sample the ribs (among the meat choices). The ribs are prepared Memphis style and the outer layer of the ribs are crispy and prepared fantastically well with the insides being extremely juicy and tender (as Hannah describes it- fall off the bone tender). The BBQ sauce is mild and isn't overpowering. This is typical of sauces served at BBQ joints that are confident in their meat preparations (since they do not try to mask any deficiencies using the sauce). While I was extremely impressed, I would say a bit more wood chip flavoring would have been an added bonus. It is quite a long way...but given the opportunity, this is a wonderful opportunity to sample fantastic BBQ far better than what the DMV has to offer. While I have not sampled DCity Smokehouse (which seems to be "the" BBQ spot in DC), I would be hard pressed to believe that it'll be on par with Slab O Ribs. If you are intent on going, be sure to make the trip early and arrive by noon to ensure that there is meat left for sale!

    Very good ribs, and I liked the sides as well. I believe these are charcoal smoked instead of hardwood (if I'm wrong someone will correct me) which some purists might not like, but I really enjoyed the flavor. If I'm down that way again I'll stop in.

    Really liked this place, "Grill Master Joe" made my first experience a pleasant one. I especially loved the minced BBQ sandwich and the ribs.

    SO. GOOD. Anyone who knows bbq knows that if comes from some shack on the side of the road, chances are it's amazing! I don't eat pork so I was looking for some beef but was dissapointed. However, the chicken MORE than made up for it! Sides were pretty good too. The menu has permanent residence on the side of my fridge!

    SO DELICIOUS. Fall-off-the-bone, melt-in-your-mouth yummy. Asked Joe for recommendations, he handed us some ribs...and I was sold. The place is really small and really really smokey, but it's completely worth smelling like smoke for hours afterwards. It's shack-like, and some with more delicate sensibilities may not wish to eat at such an establishment, but: 1. you don't eat inside, and; 2. it's delicious. Get the ribs!! Before this, I never wished I lived in (or closer to) southern Maryland...

    Ok....I know it's a shack however the food is GREAT! I still like the ribs at George's better but the pulled pork BBQ sandwich is to die for.

    "Grill Master" Joe knows BBQ. Oh yes he does. This little shack on the side of the road is easy to miss, but make the effort to find it. You won't be sorry. The ribs are fall-off-the-bone tender, and perfectly seasoned and smoked. String beans and collard greens are on point, and the macaroni and cheese is unlike anything I've had in years. We're big big BIG fans of this place. A++ would recommend.

    SLAB-O-RIBS is currently open for the season, guys!!! This very unassuming shack off of Livingston Road offers the best ribs EVER! Mr. Joe, the owner, is oh-so-awesome and very passionate about his ribs and his homemade sides (like potato salad, collard greens, mac & cheese, baked beans, etc.) - and, rightfully so, as his food is sooo delicious! If you're lucky, he sometimes has hot-out-of-the-oven yellow cake and rum/whisky cake available (next availability will be during Memorial Day weekend!). We always get a couple of slabs of ribs, hot BBQ sauce on the side (mild sauce is also available), and family-sized sides of the collard greens, potato salad, mac & cheese, and the baked beans. The ribs are fall-off-the-bone tender, has a lovely crispy exterior, and that lovely color within. The homemade BBQ sauce also takes it to a whole another level, but the ribs themselves are flavorful as it is, so sauce is technically not needed! Don't forget to ask if they have NC-style pulled pork, as that is just so moist and so flavorful - don't forget to get a cup of their coleslaw for that nice creamy crunch complementing situation! They have outside seating available, but we usually take it to-go. One of my favorite places EVER, we've been bringing all of our dear friends, and they all become Mr. Joe's fans right on the spot - SNAP* Check out Slab-o-Ribs - you won't be disappointed :D +Memphis-style ribsssss :D +NC-style pulled pork! +hot sauce & mild BBQ sauce available +yummy sides (collared greens, potato salad, mac & cheese, and baked beans) +yellow cake and rum cake available on special weekends +ask for Mr. Joe :D :D :D +limited outside seating available +open Sat & Sun, during summer months +catering available +little lot for your car

    Outstanding less than a "whole in the wall" place. This is the real deal, and a pleasure to patronize a real mom and pop outfit! The ribs were plenty smoky and offered wet or dry (we had the dry) and added a very tasty (if a tad sweet) BBQ sauce. They were also offering free samples of everything too. We got the collards (which were not on the menu that had plenty of fatback in them as well), the baked beans and the macaroni and cheese. The Mac and Cheese was old style - meaning too soft for my taste, but extremely flavorful. We have an 18 month old, so could not stay and eat on the tables out back. When we go again, we will bring her highchair because a big part of eating out good BBQ is the atmosphere!

    Not bad. Got the ribs and though the place had recently opened, service was a bit slow. The ribs were ok, a couple were hard but they were ok otherwise. Found the greens salty. Not sure if I'll return.
